I am so excited about the kitchen these days, borderline obsessed. In an attempt to incorporate more plants into our daily life I’ve allowed myself the luxury of a few purchases. While summer salads abound, eating vegetables isn’t difficult at all, it’s a pleasure. But I’d like to veg it up in other forms and in other seasons. Enter four new (used) vegetable-based cookbooks -which means I have to give four books away, our rule in the tiny NYC space; a high powered blender– by far the biggest purchase I’ve made in years (guys, I finally own a blender!!); and a spiralizer. The spiralizer arrived first so on a whim, I threw this recipe together. And wow.
I think I’ve spoken about my dad’s obsession with kitchen gadgets in the 90s. When we were growing up my dad was such a fan of infomercials. We had a food dehydrator, a million different juicers, DD7 stain remover, a toast imprinter that made an imprint of “I love you” inside a heart on our morning toast–I kind of wish we still had that. We had a haircut buzzer (which my husband still uses all the time), a cotton candy machine, a popcorn machine and many other interesting devices. We’d use these gadgets like it was 1999 and then promptly forget about them, until maybe a brief renaissance of inspiration, then back to the cupboard.
Because of that and because I have the smallest kitchen ever, I am a total minimalist and hardly own any gadgets at all. But today that changed. I own a spiralizer and professional grade blender! Two items I intend to use very often. If this quick, throw- together dish is any indication of how well this can be used, I’ve got some good cooking ahead of me. Since I’ve replaced most of our regular pasta with brown rice pasta anyway, this could be a perfect stand in on almost any night. In about 15 minutes I made a meal so good I actually gasped. The key is the mix. Al dente zucchini with crunchy cashews, bright snap peas, lemon, cilantro and ginger. Nutty, tangy, hefty and light all in one bowl.
In contemplation of longevity, I’ve been shifting my diet toward something more plant based and whole foods oriented. It’s been an incredible learning process and has renewed my vision of both the plate and my outlook on the world. I’ve focused on intention and detached attention in my interactions and choices and somehow that’s created an insightful awareness that’s a little more balanced. It’s a subtle shift, but it’s remarkable in that it’s stirred a deeper compassion in me and removed some expectation, both of myself and of others. In terms of recipes, it’s opened a new world driven by passion for nutrition and inventiveness.

MISO TAHINI ZUCCHINI NOODLES W/ CASHEWS & SNAP PEAS
INGREDIENTS:
For the Pasta:
- 1 lb zucchini cut into thin strands or spiralized
- 1/4 cup raw unsalted cashews
- 1/2 cup snap peas, chopped
- 1 handful cilantro
For the Miso Tahini Dressing:
- 1/4 cup tahini
- 1 tablespoon red or white miso
- 1 tablespoon lemon juice
- 1 tablespoon grated ginger
- 1/4 cup or more warm water
- freshly cracked black pepper
DIRECTIONS:
For the Pasta:
Add the cashews to a medium pan over medium flame and let roast for about 7 minutes, stirring every once in a while for an even cook. Remove from heat and set aside.
Meanwhile in a medium pan over medium heat add a tablespoon of olive oil or cooking spray and throw in the zucchini. Let simmer until cooked al dente, about 10 minutes, stirring every once in a while for an even cook. When finished cooking, remove from heat and pour into a bowl.
For the Miso Tahini Dressing:
In a small bowl , combine the tahini, miso, lemon juice and ginger. Be generous with the ginger. To me it makes the dish! Mix with a spoon into a smooth paste. Add the warm water gradually, stirring or shaking (if using a jar) until the dressing reaches desired consistency. It may need more than 1/4 cup. Taste for seasoning. Add pepper if desired.
This will store in the refrigerator for about a week. Dressing thickens up as it sits, so you will need to add more water to thin.
Assemble:
To the bowl of zucchini noodles add generous amounts of cilantro, snap peas and the cashews. Add the miso tahini dressing to taste and stir.

Ooh that looks and sounds so fresh and delicious! I have a few gadgets but have to say I use most of them (apart from the juicer…such a messy thing and it uses soooo much fruit and veg for so little juice). Don’t have a spiralizer though and I am beginning to think I need one!

The trouble with lots of gadgets is the space they take up and, when you put them away, you often forget you have them. If it fits on the counter without making it look cluttered, you are “ahead of the game”.

Great dish, immediately on my how to cope with the zucchini glut list. I have to own up about being a gadget person – only useful one’s of course – and glad to have a spiralizer lurking in my larder to bathe another veg in miso-tahini sauce and to add cashews on top – my kind of heaven. I couldn’t believe that I found zucchini already cut up into spaghetti strips in the store produce section. I didn’t know what to do with it so I stir fried it and then added some soy sauce. Just before serving I topped it off with toasted sesame oil. Voila! Your father and I loved it! Just another way to prepare this! I also like to use zucchini in thick strips like lasagna noodles and use those strips to replace the noodles for a lasagna.

I saw the zoodles at Whole Foods too. But i’m not sure if they’ll do it year round with all the vegetables I want. Your recipe sounds delicious too. I’ll have to try it. Glad you liked it! I love your zucchini lasagna noodles. I saw those in the store too, but they’re just as easy to cut. Wow, I love the sound of that toast imprinter! I have a few gadgets, but they include an ancient Kenwood Chef (which is a fantastic workhorse) from the early 60s and an ice cream machine that I have never used (I can never find room in the freezer to freeze the drum). I don’t have a spiralizer yet, but a vegetarian friend makes sure I’m not missing out. Spiralized zucchini is one of my favourites 🙂

Are the plants INSIDE your kitchen? I tried growing herbs in my kitchen next to the window and they died I can only have them outside. Someone told me it’s probably because of the fumes from coking. Anyway such a coincidence the other day I made a salad with… CASHEWS! The first time I cooked with cashews. It was delicious. It was a list minute thought to throw them in, then to toast them first… then I though oh while I’m at it, why dont I add a touch of sugar and caramelize them on the stove. So good, you should give it a try!

Oh I’ll definitely try the sugar version. I have only recently rediscovered cashews. My grandma used to bring then over when we were little as a snack and I didn’t get it. Why not candy? Oh but she was ahead of her time. I have no plants in my kitchen. Anything I want to grow has to be on the window in my bedroom. It’s where I take all my photos and the only room that gets light!

Hello Amanda – reading this from Quebec with a strong coffee in one hand and a chocolate croissant in the other. So love your references to your father and his love affair with infomercials and kitchen gadgets. How I wish I could find a toaster that imprints “I love you” into a heart on my morning toast. Such happiness! I once stayed in a small inn in Stowe with a toaster that stamped a peace sign on my toast and it made me smile every morning.
Oooh and I’m a tad jealous of your professional grade blender and spiralizer. What a great way to add new life to the kitchen. Like everyone, I’ve been looking at spiralizers longingly for months but haven’t moved from admiration into full blown action yet.
This is a beautiful dish you’ve put together here – all the textures and such an array of flavour – especially in the miso-tahini dressing. I love and applaud the move to a more plant-based diet – am doing this myself too – though apparently I still love the odd carb loading fest especially when confronted with chocolate croissants! ♥♥
